Tannase Activity Assay kit
The full name of tanninase is tannin acyl hydrolase (Tannase, EC 3.1.1.20), which exists in plants rich in tannins and also widely in microorganisms.
By hydrolyzing the ester bond and the carboxyl bond of the depsil, gallic acid and glucose are generated.
Propyl gallate (PG) is used as the substrate for the enzymatic reaction of tannin, which has a characteristic absorption peak at 270 nn, according to the absorbance before and after the reaction to calculate the tannase activity.
