Polyphenol Oxidase Activity Assay kit
PPO (EC1.10.3.1) mainly exists in animals, plants, microorganisms and cultured cells. It is a copper-containing oxidase that can oxidize monohydric phenols and dihydric phenols to produce quinones, thereby causing browning. It is closely related to fruit and vegetable processing, tea quality and tissue culture.
PPO can catalyze catechol to produce quinone, which has characteristic light absorption at 410nm.
