Pectin lyase (EC4.2.2.10) is an important part of pectinase, a depolymerase that can degrade plant cell walls and cause plant tissues to soften or even die. It has a wide range of sources, mainly from microorganisms. It can be used for clarification of fruit juice and fruit wine, increase fruit juice yield, purification of plant virus, bleaching of pulp and biological refining of textiles. It has potential application value in reducing environmental pollution and reducing energy consumption.
Pectin lyase acts on the alpha-1,4 glycosidic bond in pectin to generate unsaturated oligogalacturonic acid with unsaturated bond between the reducing end C4 and C5, which has a characteristic at 235nm Absorption peak.
