Neutral Protease Activity Assay kit

NP can catalyze the hydrolysis of protein under certain temperature and neutral pH conditions. Due to its safety, non-toxicity, strong hydrolysis ability, and wide range of action, neutral protease is often used in the production of food, feed, cosmetics and nutraceuticals.

Under neutral conditions, NP catalyzes hydrolysis of casein to produce tyrosine; under alkaline conditions, tyrosine reduces phosphomolybdic acid compounds to produce tungsten blue; there is a characteristic absorption peak at 680nm.
