Invertase (Ivr) catalyzes the irreversible decomposition of sucrose into fructose and glucose, and is one of the key enzymes for sucrose metabolism in higher plants and roots. According to the optimal pH, higher plant Ivr is divided into two types: acid invertase (AI) and neutral invertase (NI). NI mainly exists in the cytoplasm. It is responsible for decomposing sucrose in the cytoplasm into fructose and glucose.
NI catalyzes the decomposition of sucrose to produce reducing sugars, which further react with 3,5-dinitrosalicylic acid to produce brown-red amino compounds, which are characteristic at 540nm. Light absorption, within a certain range, the 540nm light absorption value is proportional to the amount of reducing sugar produced. The NI activity is calculated by the rate of increase in light absorption.
