Cysteinyl Sulfoxide Lyase Activity Assay kit
Cysteinyl sulfoxide lyase, abbreviated as alliinase, also known as alliinase. Cysteyl sulfoxide lyase is present in almost all allium plants, such as garlic, onions, leeks, etc. Alliinase is present inside the vacuole, and its natural substrate, alliin, is present in the cytoplasm; Alliinase comes into contact with alliin and catalyzes the production of allicin and cis- and trans-ahorene and produces by-products such as pyruvate and ammonia, which is also the main source of the pungent smell of plants such as garlic. Cysteamide sulfoxide lyase catalyzes the formation of pyruvate from S-methyl-L-cysteine sulfoxide. Pyruvate can react with 2,4-dinitrophenylhydrazine to form 2,4-dinitrophenylhydrazone, which is brownish-red under alkaline conditions. The change in absorbance at 505 nm is measured to calculate the CSL enzyme activity.
