Ascorbic Acid is also known as vitamin C. AsA is a coenzyme, a free radical scavenger, an electron complex/acceptor, and a substrate for the biosynthesis of oxalate and tartrate. As the most important antioxidant in plant cells, AsA plays a pivotal role in protecting chloroplasts from oxidative damage and is also one of the important indicators for measuring the quality of crop products.

Ascorbate oxidase (AAO) catalyzes the oxidation of AsA to produce DHA. By measuring the oxidation rate of AsA, the AsA content can be calculated.
