Acid Invertase Activity Assay kit

Invertase (Ivr) catalyzes the irreversible decomposition of sucrose into fructose and glucose, and is one of the key enzymes for sucrose metabolism. According to the optimal pH, higher plant Ivr is divided into two types: acid invertase (AI) and neutral invertase (NI). AI (EC 3.2.1.26) mainly exists in the vacuole or free space, the optimum pH is 4.5~5.0 (acidic). By degrading the sucrose in the vacuole, the utilization of the sucrose in the vacuole and the sugar in the fruit are adjusted.
