Sucrose Synthase (Sucrose Synthase, SS) is a key enzyme in the process of plant sugar metabolism, responsible for catalyzing the reversible reaction of sucrose decomposition and synthesis. The decomposition activity can catalyze the hydrolysis of sucrose into UDPG and fructose, and participate in the metabolic pathways such as the synthesis of starch, cellulose and hemicellulose.
Decomposition direction SS-I catalyzes the reaction of sucrose and UDP to produce fructose and UDPG, fructose and 3,5-dinitrosalicylic acid to form a characteristic absorption at 540nm. For the brown-red substance of the peak, the SS-I activity can be calculated by measuring the change in absorbance at 540nm.
